Jamaican Curry Chicken
A spicy and flavorful dish made with marinated chicken cooked in a rich Jamaican curry sauce. Serve with rice or roti for a delicious meal.
Ingredients
- β1 lb chicken breastboneless and skinless
- β2 tsp jamaican curry powder
- β2 tbsp curry oilor vegetable oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp gingergrated
- β1 tsp curry leavesdried
- β1 tsp salt
- β1 tsp black pepper
- β1 tsp hot sauceoptional

In a blender or food processor, combine curry powder, curry leaves, garlic, ginger, salt, and black pepper. Blend until smooth.

In a large skillet, heat curry oil over medium-high heat. Add chicken and cook until browned on all sides, about 5-6 minutes.

Add blended spice mixture to the skillet and stir to coat chicken evenly.

Add chopped onion to the skillet and cook until translucent, about 3-4 minutes.

Add hot sauce (if using) and stir to combine.

Reduce heat to medium-low and simmer for 10-12 minutes or until chicken is cooked through.
