Spicy Paella with Collard Greens
A twist on the classic Spanish dish, this spicy paella combines the flavors of Japan with the nutrition of collard greens.
Ingredients
- β1 bunch Collard Greens
- β1 cup Saffron Rice
- β1 lb Spicy Japanese Sausage
- β2 tsp Smoked Paprika
- β2 tbsp Quick Cooking Olive Oil
- β3 cloves Garlic
- β1/4 cup Chopped Green Onions
- β2 tbsp Soy Sauce
- β2 tbsp Lime Juice
- βto taste Salt and Pepper
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the spicy Japanese sausage and cook until browned, about 5 minutes.

Add the garlic and smoked paprika and cook for 1 minute.

Add the saffron rice and stir to coat with the oil and mix with the sausage and spices.

Add 2 cups of water and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes, or until the rice is cooked.

Stir in the collard greens and cook until wilted.

Season with soy sauce, lime juice, salt, and pepper to taste.
