Jamaican Chicken Teriyaki
A unique fusion of Jamaican and Japanese flavors, featuring chicken cooked in a sweet and spicy teriyaki sauce.

- β1 tsp curry powder
- β1 spring onionschopped
- β1 tsp jamaican jerk seasoning
- β1/2 cup soy sauce
- β1/4 cup honey
- β2 tbsp rice vinegar
- β1/4 cup water

Preheat oven to 400Β°F (200Β°C).

In a small bowl, mix together curry powder and jamaican jerk seasoning.

Rub the spice mixture all over the chicken breasts, making sure to coat evenly.

Heat a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 5-6 minutes.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.

While the chicken is cooking, combine soy sauce, honey, rice vinegar, and water in a small saucepan. Bring to a boil over medium heat, then reduce the heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly.

Remove the chicken from the oven and let it rest for a few minutes before slicing into thin strips.

Serve the chicken with the teriyaki sauce spooned over the top. Garnish with chopped spring onions and serve over rice or noodles.
