Vietnamese Noodle Soup
A quick and easy steamed noodle soup with tofu and vietnamese flavors.

Ingredients
- β8 oz noodlesrice noodles
- β1 block tofuextra-firm
- β2 cups vegetable brothlow-sodium
- β2 tbsp soy saucelow-sodium
- β1 tsp fish sauceoptional
- β1 tsp lime juicefreshly squeezed
- β1/4 cup chopped cilantrofresh
- β1/4 cup chopped scallionsfresh

Instructions

Cook noodles according to package instructions.

Cut tofu into small cubes and cook in a pan with a little oil until golden brown.

In a large pot, combine vegetable broth, soy sauce, fish sauce (if using), and lime juice.

Bring the broth to a simmer and cook for 5 minutes.

Add cooked noodles and tofu to the pot and stir to combine.
