Greek Fruit Galette
A sweet and tangy dessert featuring a flaky crust and topped with a mix of fresh Greek yogurt, honey, and seasonal fruit.
Ingredients

- β1/2 cup Granulated sugar
- β1/2 cup Cold unsalted butter
- β1 cup Greek yogurt
- β2 tablespoons Honey
- β1 cup Mixed berries (strawberries, blueberries, raspberries)
- β1 tablespoon Lemon zest
- β1/4 teaspoon Vanilla extract

Preheat the oven to 375Β°F (190Β°C).

In a large mixing bowl, combine the flour and sugar. Add the cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs.

Gradually add cold water, stirring with a fork until the dough comes together in a ball.

Turn the dough out onto a lightly floured surface and roll it out to a thickness of about 1/8 inch.

Transfer the dough to a 9-inch tart pan with a removable bottom. Trim the edges and press the dough into the corners of the pan.

In a separate bowl, mix together the Greek yogurt, honey, lemon zest, and vanilla extract. Spoon the mixture over the dough, leaving a 1-inch border around the edges.

Top the yogurt mixture with the mixed berries.

Fold the edges of the dough up over the berries, pressing gently to seal.
