Thai-Style Vegetarian Skewers
A flavorful and colorful vegetarian skewer dish inspired by Thai cuisine, featuring marinated tofu and vegetables.
Ingredients
- β1 block (14 oz) tofuextra-firm, drained and cut into 1-inch cubes
- β2 cups bell peppersany color, cut into 1-inch pieces

- β1 cup mushroomsbutton or cremini, sliced
- β1 cup khanomThai-style rice noodles, soaked and drained
- β2 leaves pandan leavesfresh or dried, for wrapping skewers

In a large bowl, whisk together quick sauce, 1 tablespoon of oil, and 1 tablespoon of chopped fresh cilantro.

Add the tofu, bell peppers, onion, and mushrooms to the marinade and toss to coat.

Thread the marinated vegetables and tofu onto the pandan leaves, leaving a small space between each piece.
