Quick Indian-Style Pasta
A simple and flavorful pasta dish inspired by Indian cuisine, made with quick-cooking farfalle and a blend of aromatic spices.
Ingredients
- β8 oz farfalle pasta
- β1 tsp Indian curry powder
- β2 tbsp olive oil
- β1 medium onion
- β2 cloves garlic
- β14 oz canned crushed tomatoes
- β1 cup vegetable broth
- βto taste salt
- βchopped (optional) fresh cilantro

Bring a large pot of salted water to a boil and cook the farfalle pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, about 3-4 minutes.

Add the garlic and cook for another minute, until fragrant.

Stir in the Indian curry powder and cook for 1 minute, until fragrant.

Add the crushed tomatoes, vegetable broth, and reserved pasta water to the skillet. Bring the sauce to a simmer and let cook for 5-7 minutes, stirring occasionally.

Add the cooked farfalle pasta to the skillet and toss with the sauce until well coated.
