Baked Pumpkin Croatian Casserole
A delicious and easy-to-make casserole perfect for fall and winter seasons. Combining the flavors of Croatia with the warmth of pumpkin.
Ingredients
- β1 cup pumpkin puree
- β8 oz baked ziti pasta
- β1 cup ricotta cheese
- β1 cup shredded mozzarella cheese
- β2 eggs
- βto taste salt and pepper
- βchopped fresh parsley
Instructions

Preheat the oven to 375Β°F (190Β°C).

Cook the ziti pasta according to package instructions and set aside.

In a large mixing bowl, combine the pumpkin puree, ricotta cheese, eggs, salt, and pepper. Mix well.

In a 9x13 inch baking dish, create a layer of the cooked ziti pasta.

Spread half of the pumpkin-ricotta mixture over the pasta.

Sprinkle with half of the mozzarella cheese.

Repeat the layers, finishing with the remaining mozzarella cheese on top.

Bake for 35-40 minutes, or until the cheese is melted and bubbly.

Remove from the oven and sprinkle with chopped parsley.
