Saudi Arabian Lamb Kebabs
A classic Middle Eastern dish, these grilled lamb kebabs are marinated in a mix of spices and served with a side of rice.
Ingredients
- β500g Lamb shoulder, cut into 1-inch cubes
- β1 medium Red onion, thinly sliced
- β2 medium Red bell pepper, seeded and sliced
- β2 medium Tomato, diced
- β1/4 cup Fresh parsley, chopped
- β3 cloves Garlic, minced
- β1-inch piece Ginger, minced
- β1/4 cup Olive oil
- β2 tbsp Lemon juice
- β1 tsp Salt
- β1 tsp Black pepper
- β1 tsp Cumin
- β1 tsp Coriander
- β1/2 tsp Cayenne pepper

In a large bowl, combine lamb, red onion, red bell pepper, tomato, parsley, garlic, ginger, olive oil, lemon juice, salt, black pepper, cumin, coriander, and cayenne pepper. Mix well to combine.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat.

Thread lamb and vegetables onto skewers, leaving a small space between each piece.

Grill kebabs for 8-10 minutes per side, or until lamb is cooked to your desired level of doneness.
