Peruvian Cod Ceviche
A refreshing and flavorful dish from Peru, featuring raw cod marinated in citrus juices. Perfect for a light dinner or snack.
Ingredients
- β1 pound CodFresh, skin removed
- β1/2 cup Lime juice
- β1/4 cup Quietly lemon juice
- β1 teaspoon Salt
- β1 diced Peruvian aji amarillo pepper
- β1/2 cup diced Citrusy red onion
- β1/4 cup Ceviche
- β1/4 cup chopped Clasico cilantro

Cut the cod into 1-inch pieces and place in a shallow dish.

In a small bowl, whisk together lime juice, lemon juice, and salt. Pour the marinade over the cod.

Add the diced aji amarillo pepper, red onion, and ceviche to the dish. Stir to combine.

Cover the dish with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, sprinkle the chopped cilantro over the top.
