Cozy Deodeok Root Stew
A comforting and nourishing stew that combines the earthy sweetness of deodeok root with the warmth of traditional portuguese flavors.
Ingredients
- β2 medium Deodeok Rootpeeled and diced
- β3 medium Potatoespeeled and cubed
- β1 medium Onionschopped
- β3 cloves Garlicminced
- β1/2 pound Chorizo Sausagesliced
- β2 cups Beef Brothlow sodium
- β1/4 cup White Wineoptional
- β Salt and Pepperto taste

Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat.

Add the sliced chorizo sausage and cook until browned, about 5 minutes.

Add the chopped onions and minced garlic and cook until the onions are translucent, about 5 minutes.

Add the diced deodeok root and cubed potatoes and cook for 5 minutes.

Add the beef broth, white wine (if using), salt, and pepper.

Bring the stew to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
