Irish Stew
A hearty and comforting Irish stew made with tender beef and vegetables in a rich broth.
Ingredients
- β1 pound Beef stew meat
- β2 medium Onion
- β3 medium Potatoes
- β2 large Carrots
- β1 cup Pearl onions
- β2 tablespoons All-purpose flour
- β6 slices Bacon
- β4 cups Chicken broth

In a large Dutch oven, cook the bacon over medium heat until crispy.

Remove the bacon from the pot and set aside.

Add the beef to the pot and cook until browned, about 5 minutes.

Add the onion, potatoes, carrots, and pearl onions to the pot.

Sprinkle the flour over the top and cook for 1 minute.

Gradually add the chicken broth, whisking continuously.

Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.

Add the browned bacon back to the pot and stir to combine.
