Kenyan Cashew Stew
A hearty and flavorful stew from Kenya, made with tender beef, crunchy cashews, and a blend of aromatic spices.
Ingredients
- β1 lb Beef (1 pound)chuck or round
- β1 cup Cashews (1 cup)chopped
- β1 medium Onion (1 medium)chopped
- β3 cloves Garlic (3 cloves)minced
- β2 medium Tomatoes (2 medium)chopped
- β2 tablespoons Kenyan stew spice blendavailable at African markets or online
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 cups Water (2 cups)

Heat oil in a large pot over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the beef and cook until browned, breaking it up into small pieces.

Add the tomatoes, Kenyan stew spice blend, salt, and black pepper.

Stir well to combine.

Add the water and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours.

Stir in the cashews and continue to simmer for 10 minutes.
