Tunisian Chicken and Greens Pilaf
A flavorful and healthy pilaf dish made with Tunisian spices, chicken, and nutritious shungiku greens.
Ingredients
- β1.5 lbs chicken breastboneless and skinless
- β1 cup fluffy jasmine riceuncooked
- β2 cups shungiku greensfresh
- β1 quietly roasted red pepperroasted and diced
- β2 tsp tunisian spice blendstore-bought or homemade
- β1 cup pilafuncooked
Instructions

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Add the chicken breast and cook until browned on both sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the diced red pepper to the skillet and cook for 2-3 minutes.

Add the Tunisian spice blend and cook for another minute.

Add the pilaf to the skillet and cook for 2-3 minutes, stirring constantly.

Add the chicken broth to the skillet and bring to a boil.

Reduce the heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed.
