Kenyan Fennel Salad
A refreshing salad inspired by Kenyan cuisine, featuring crunchy fennel and a hint of sweetness.
Ingredients
- β2 bulbs Fennel
- β4 cups Mixed greens
- β1 medium Red onion
- β2 tsp Kenyan spices
- β2 tbsp Lemon juice
- β2 tbsp Salad oil
- β1 cup Quenched water
- β1 cup Quietly ripened tomatoes

1. Chop the fennel into thin slices.

2. In a pan, heat 1 tablespoon of salad oil over medium heat.

3. Add the chopped fennel and cook for 5 minutes, or until tender.

4. In a separate pan, heat the remaining 1 tablespoon of salad oil over low heat.

5. Add the chopped red onion and cook for 3-4 minutes, or until slightly caramelized.

6. In a large bowl, combine the cooked fennel, mixed greens, and cooked red onion.

7. Sprinkle the Kenyan spices over the salad and toss to combine.
