Spicy Chicken Quesadillas
A flavorful and spicy twist on the classic Mexican dish. Perfect for a quick dinner or lunch.
Ingredients
- β1 pound boneless, skinless chicken breastscut into small pieces
- β4 quesadilla-sized tortillascorn or flour
- β1 cup shredded cheeseMonterey Jack or Cheddar
- β1 medium diced onionoptional
- β1 medium diced bell pepperoptional
- β1 tablespoon mexican seasoningor to taste
- β1/2 teaspoon cuminor to taste
- β1/4 teaspoon saltor to taste
- β1/4 teaspoon pepperor to taste
- β1 cup sour creamoptional
Instructions

Heat a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through.

Add the diced onion and bell pepper to the skillet and cook until softened.

Add the mexican seasoning, cumin, salt, and pepper to the skillet and stir to combine.

In a separate pan or griddle, warm the tortillas over medium heat.

Place a tortilla in the pan and sprinkle shredded cheese on half of the tortilla.

Add some of the cooked chicken and onion mixture on top of the cheese.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve with sour cream on top.
