Quietly Rich Indian Idli
A rich and quiet take on the traditional Indian idli. A comforting breakfast dish that pairs perfectly with a warm beverage.
Ingredients
- β2 cups Idli riceshort-grain rice
- β1 cup Urad dalsplit black lentils
- β1/4 cup Fenugreek seedsoptional
- β1/2 cup Yogurtfull-fat yogurt
- β4 cups Water

Soak the idli rice and urad dal in water for 4-5 hours.

Drain and rinse the rice and dal. Grind them into a smooth batter in a blender or food processor.

Add the fenugreek seeds, yogurt, and 1 cup of water to the grinder. Blend until well combined.

Transfer the batter to a large bowl. Add 2 cups of water and mix well.

The batter should be smooth and free of lumps. Cover and let it ferment for 4-5 hours.

Preheat a non-stick idli steamer or a metal steamer basket. Grease the idli molds with oil.

Pour the batter into the molds, filling them about 3/4 of the way.

Steam the idlis for 12-15 minutes. Remove from heat and let them cool.

Serve the idlis with a dollop of yogurt and a sprinkle of chutney or sambar.
