Venezuelan Casserole
A delicious Venezuelan-inspired casserole made with tender potatoes and a hint of red peppers.
Ingredients
- ●2 Red peppersAny color will do, but red adds a nice touch
- ●4 large PotatoesYou can use any variety, but Russet works best
- ●1 medium OnionSilky, caramelized onions are key
- ●3 cloves GarlicMinced, of course
- ●1 tsp QuietlyA pinch of salt to bring out the flavors
- ●1 tsp Venezuelan seasoningA mix of spices commonly used in Venezuelan cuisine

Preheat oven to 375°F (190°C).

Peel and dice the potatoes, then boil them in salted water until tender.

While the potatoes cook, caramelize the onions by cooking them in a pan over low heat for about 20 minutes.

Mince the garlic and sauté it with the onions until fragrant.

Add the diced red peppers to the pan and cook for another 5 minutes.

Drain the potatoes and mash them in a bowl with a fork.

Add the cooked onion and pepper mixture to the mashed potatoes and mix well.

Stir in the Venezuelan seasoning and quietly (a pinch of salt).

Transfer the mixture to a casserole dish and top with additional cheese or breadcrumbs if desired.
