Ethiopian Collard Greens Stew
A traditional Ethiopian-style collard greens stew made with simmered greens and a blend of spices.

Ingredients
- β2 pounds Collard greensstems removed, cut into 1-inch pieces
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 inches Gingergrated
- β2 teaspoons Berbere spiceEthiopian chili powder
- β1/4 cup Niter kibbeh (Ethiopian clarified butter)or regular butter
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste
- β4 cups Wateror vegetable broth

Heat the niter kibbeh or butter in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the berbere spice and cook for 1-2 minutes, until fragrant.

Add the collard greens and cook until wilted, about 5 minutes.
