Smoky Japanese Tofu Casserole
A unique and flavorful casserole that combines the smokiness of tofu with the spices of Japan. Perfect for a weeknight dinner.
Ingredients
- ●1 block (14 oz) silken tofudrained and crumbled
- ●2 tsp quietly smoked paprika
- ●2 tbsp Japanese rice vinegar
- ●1 tbsp soy sauce
- ●1/4 cup coconut oil
- ●1/4 cup green onionschopped
- ●1/2 cup shredded daikonoptional

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together the smoked paprika, soy sauce, and rice vinegar.

Cut the tofu into 1-inch cubes and place on a baking sheet.

Drizzle the coconut oil over the tofu and sprinkle with the paprika mixture.

Bake the tofu for 20-25 minutes, or until golden brown.

Meanwhile, cook the Japanese rice according to package instructions.

In a separate pan, sauté the green onions and shredded daikon (if using) in a little oil until softened.

To assemble the casserole, place a layer of cooked rice on the bottom of a baking dish.

Add a layer of baked tofu, followed by a layer of the onion-daikon mixture.

Repeat the layers two more times, ending with a layer of rice on top.

Cover the dish with foil and bake for 20-25 minutes, or until the casserole is hot and the rice is tender.
