Satay with Smoky Cobnut Sauce

- β1/2 cup quietly roasted peanutsfor the sauce
- β2 tablespoons smoky soy saucefor the sauce
- β1/4 cup coconut milkfor the sauce
- β2 cups cobnutsfor the sauce
- β2 tablespoons lime juicefor the marinade
- β1 tablespoon brown sugarfor the marinade
- β2 cloves garlicminced
- β2 tablespoons corianderminced

In a blender or food processor, combine peanuts, soy sauce, coconut milk, and cobnuts. Blend until smooth.

In a large bowl, whisk together lime juice, brown sugar, garlic, and coriander. Add the chicken pieces and marinate for at least 30 minutes.
