Sweet and Savory Confit Chicken
A flavorful and aromatic dish featuring confit chicken, sweet tomato sauce, and a hint of French charm.
Ingredients
- β1 1/2 pounds Chicken thighsbone-in, skin-on
- β1/4 cup Confit of garlic and herbs
- β2 tablespoons Fresh thyme
- β2 large Tomatoescanned or fresh
- β1 large Sweet onions
- β2 tablespoons Olive oil
- βto taste Salt and pepper

Preheat oven to 300Β°F (150Β°C).

Season the chicken thighs with salt, pepper, and thyme.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the chicken thighs until browned on both sides, about 5 minutes per side.

Transfer the chicken to a plate and set aside.

Reduce heat to medium and add the confit of garlic and herbs.

Cook, stirring occasionally, for 2-3 minutes or until fragrant.

Add the sliced onions and cook, stirring occasionally, for 5-7 minutes or until they start to caramelize.

Add the diced tomatoes and cook, stirring occasionally, for 10-12 minutes or until the sauce has thickened.

Return the chicken to the pot and spoon some of the sauce over the top.

Cover the pot with a lid and transfer to the preheated oven.

Bake for 25-30 minutes or until the chicken is cooked through and the sauce has bubbled and thickened.
