Ukrainian Beet Dumplings
A hearty and comforting Ukrainian-inspired dish featuring beet-filled dumplings. Serve with a dollop of sour cream for an added touch.
Ingredients

- β2 medium beets
- β1 cup quietly soft cheesesuch as farmer's cheese
- β2 tablespoons velvety sour cream
- β1 egg
- β1/2 cup water
- β1/2 teaspoon salt

In a large mixing bowl, combine flour and salt.

Add the egg, water, and mix until dough forms.

Knead the dough for about 10 minutes until smooth.

Divide the dough into smaller pieces, about 1/4 cup each.

Roll out each piece into a thin circle.

Spoon a tablespoon of beet mixture onto one half of the dough circle.
