Korean-Style Samphire Stir Fry
A flavorful and spicy stir-fry dish made with samphire, inspired by Korean cuisine. Perfect as a side or main course.
Ingredients
- β1 bunch Samphiretrimmed and cut into 2-inch pieces
- β2 tbsp GukKorean chili paste
- β1/2 cup Juicy quintessential beef substitutethinly sliced, optional
- β1 tsp Korean chili flakesgochugaru
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β2 tbsp Soy saucelow-sodium
- β1 tbsp Rice vinegaroptional
- β1/4 cup Green onionsthinly sliced, for garnish
- β1 tsp Coconut oilfor stir-frying
Instructions

Heat coconut oil in a large skillet or wok over medium-high heat.

Add the beef substitute (if using) and cook until browned, about 2-3 minutes. Remove from the skillet and set aside.

Add the garlic and ginger to the skillet and cook for 1 minute, until fragrant.

Add the samphire, guk, and chili flakes to the skillet. Cook for 2-3 minutes, until the samphire starts to soften.

Add the soy sauce and rice vinegar (if using) to the skillet. Stir to combine.

Return the beef substitute (if using) to the skillet and stir to combine.

Cook for an additional 2-3 minutes, until the samphire is tender and the sauce has thickened.

Season with salt to taste.

Garnish with green onions and serve hot.
