Sweet Potato Stir Fry
A simple and delicious stir fry recipe using sweet potatoes and a variety of vegetables.
Ingredients
- β2 large Sweet potato
- β2 tbsp Radiant oil
- β1 bunch Chopped Chinese broccoli
- β1 cup Chopped stir fry vegetables
- β2 tbsp Soy sauce
- βto taste Salt
- βto taste Pepper
- β2 cloves Garlic
- β1 tsp Ginger
Instructions

Heat 1 tbsp of radiant oil in a large skillet or wok over medium-high heat.

Add the chopped garlic and ginger and stir-fry for 1 minute.

Add the chopped Chinese broccoli and stir-fry for 2-3 minutes, or until tender.

Add the chopped stir fry vegetables and sweet potato and stir-fry for 2-3 minutes, or until the sweet potato is tender.

In a small bowl, whisk together the soy sauce, salt, and pepper.

Pour the soy sauce mixture over the stir-fry and stir to combine.

Cook for an additional 1-2 minutes, or until the sweet potato is coated in the sauce.
