Mediterranean Prawn Ceviche
A refreshing and light dish perfect for a summer evening. Raw prawns marinated in a zesty Mediterranean sauce.
Ingredients
- β1 pound raw prawnspeeled and deveined
- β1/4 cup lemon juicefreshly squeezed
- β2 tablespoons olive oilextra virgin
- β2 cloves garlicminced
- β1/4 teaspoon saltflaky sea salt
- β1/4 teaspoon black pepperfreshly ground
- β1/4 cup fresh parsleychopped
- β1/4 cup fresh dillchopped

In a large bowl, combine prawns, lemon juice, olive oil, garlic, salt, and black pepper.

Mix well to coat the prawns evenly.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the prawns to marinate.

Just before serving, stir in the chopped parsley and dill.

Serve chilled, garnished with additional parsley and dill if desired.

Note: Make sure to handle the prawns safely and cook them to an internal temperature of 145Β°F (63Β°C) or above.

Serve immediately, or refrigerate for up to 2 hours before serving.

Garnish with lemon wedges and serve with crusty bread or pita chips.
