Greek Lamb Casserole
A hearty and flavorful casserole made with lamb, roasted red peppers, and a hint of Greek spices.
Ingredients
- ●500g Lambground lamb
- ●2 Roasted Red Peppersdiced
- ●1 tsp Greek Seasoningmix of oregano, thyme, and rosemary
- ●1/2 tsp Red Pepper Flakeoptional for extra heat
- ●1/4 cup Greek Yogurtoptional for serving

Preheat oven to 375°F (190°C).

Cook the ground lamb in a large skillet over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the diced roasted red peppers, Greek seasoning, and red pepper flake (if using) to the skillet and cook for an additional 2-3 minutes.

In a large bowl, combine the cooked lamb mixture, 1 cup of cooked rice (unspecified, but about 200g), and 1/4 cup of crumbled feta cheese (unspecified).

Transfer the mixture to a 9x13 inch baking dish.

If using Greek yogurt, dollop the top of the casserole with it.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is lightly browned and the casserole is hot and bubbly.

Serve hot, garnished with additional Greek yogurt and red pepper flakes if desired.
