Light Chicken Curry
A refreshing and flavorful Portuguese-inspired chicken curry, made with tender chicken and a hint of spice. Perfect for a light and satisfying meal.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 can coconut milkfull-fat
- β2 tablespoons curry powderadjust to taste
- βto taste saltadjust to taste
- β1/4 cup fresh cilantrochopped, for garnish

1. Heat 2 tablespoons of oil in a large skillet over medium-high heat.

2. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

3. Remove the chicken from the skillet and set aside.

4. Add the chopped onion and minced garlic to the skillet and cook until softened, about 3-4 minutes.

5. Stir in the curry powder and cook for 1 minute.

6. Pour in the coconut milk and bring the mixture to a simmer.
