Thai Basil Curry
A flavorful and aromatic Thai-inspired curry made with fresh Thai basil, resinous curry paste, and your choice of protein. Serve with steamed rice or noodles for a delicious and satisfying meal.
Ingredients

- β1 Oniondiced
- β1/4 cup Thai basilchopped
- β2 tbsp Curry pasteresinous
- β1 can Coconut milkfull-fat
- β1 Chicken breastboneless, skinless
- β1 tsp Fish sauceoptional
- β1 tsp Soy sauceoptional
- β1/2 tsp Saltto taste
- β1/4 tsp Black pepperto taste

Heat 1 tablespoon of oil in a large pan over medium-high heat.

Add the sliced red bell pepper and cook until tender, about 3-4 minutes.

Add the diced onion and cook until softened, about 2-3 minutes.

Add the chopped Thai basil and cook for 1 minute.

Add the curry paste and cook for 1-2 minutes, until fragrant.

Add the coconut milk and bring the mixture to a simmer.

Add the chicken breast and cook until cooked through, about 5-7 minutes.

Season with fish sauce, soy sauce, salt, and black pepper to taste.
