Mexican Reviving Tamale Casserole
A comforting, flavorful casserole that combines the best of Mexican and tamales in a simple, satisfying dish

- ●4 tamalescorn husk-free tamales recommended
- ●2 cups cooked white riceday-old rice preferred
- ●1 medium oniondiced
- ●1 medium bell pepperdiced
- ●2 cloves garlicminced
- ●1 can (14.5 oz) diced tomatoes
- ●1 can (15 oz) black beans
- ●1 cup shredded cheeseMonterey Jack or Cheddar recommended

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the onion and bell pepper until tender.

Add the garlic, diced tomatoes, black beans, and reviving spice blend. Cook for 2-3 minutes.

In a large mixing bowl, combine the cooked rice, tamale filling, and sautéed vegetable mixture.

Transfer the mixture to a 9x13 inch baking dish.

Top with shredded cheese and cover with aluminum foil.
