Peruvian Chicken Skewers
A flavorful and spicy dish inspired by Peruvian cuisine, featuring marinated chicken skewers grilled to perfection.
Ingredients
- β1 pound Chicken breastcut into 1-inch pieces
- β2 Peruvian aji amarillo pepperdiced
- β1/4 cup Lime juice
- β2 tablespoons Olive oil
- β2 cloves Garlicminced
- β1 teaspoon Cumin
- β1/2 teaspoon Coriander
- β1/2 teaspoon Salt
- β1/4 teaspoon Pepper
- β1 medium Oniondiced

Preheat grill to medium-high heat.

In a blender or food processor, combine aji amarillo peppers, lime juice, garlic, cumin, coriander, salt, and pepper. Blend until smooth.

In a large bowl, whisk together olive oil and aji amarillo pepper mixture. Add chicken and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
