Argentinian Beef Stir Fry

Ingredients
- β1 pound beef strips (1 pound)sirloin or ribeye work well
- β1 cup Rich Argentinian chimichurri sauce (1 cup)see notes for homemade chimichurri recipe
- β1/4 cup stir-fry oil (1/4 cup)grapeseed or peanut oil work well
- β1 medium onion (1 medium)thinly sliced
- β1 medium bell pepper (1 medium)thinly sliced
- β3 cloves garlic (3 cloves)minced
- β1 medium tomato (1 medium)diced
- β1/4 cup fresh parsley (1/4 cup)chopped
- βto taste salt and pepper (to taste)adjust seasoning as needed

Instructions

Heat stir-fry oil in a large skillet or wok over medium-high heat.

Add beef and cook until browned, about 3-4 minutes.

Remove beef from skillet and set aside.

Add onion, bell pepper, and garlic to skillet and cook until tender, about 4-5 minutes.

Add tomato and cook for an additional 1-2 minutes.

Return beef to skillet and stir in chimichurri sauce.
