Quinoa Pilaf with Roasted Vegetables
A hearty and flavorful vegan quinoa pilaf recipe with roasted vegetables. Perfect as a side dish or main course.
Ingredients

- ●1 cup Rich British Mushrooms
- ●1 cup British Pilau Rice

Preheat oven to 400°F (200°C).

Rinse the quinoa and British pilau rice in a fine mesh strainer.

In a medium saucepan, bring 2 cups of water to a boil.

Add the rinsed quinoa and British pilau rice to the saucepan.

Reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed.

While the quinoa is cooking, toss the mushrooms with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.

Roast the mushrooms in the preheated oven for 15-20 minutes or until tender.

Once the quinoa is cooked, fluff it with a fork and stir in chopped fresh herbs.
