Australian Prawn Curry

- β12 Australian prawnspeeled and deveined
- β60g Unsalted buttersoftened
- β2 tsp Australian curry powder
- β2 inches Gingergrated
- β3 cloves Garlicminced
- β250ml Coconut milk
- β200ml Fish stock
- βto taste Salt
- βto taste Black pepper

Instructions

Heat butter in a large saucepan over medium heat.

Add curry powder and cook for 1-2 minutes, stirring constantly.

Add ginger and garlic and cook for another minute, stirring constantly.

Add prawns and cook for 2-3 minutes, until they start to turn pink.

Pour in coconut milk and fish stock, and bring the mixture to a simmer.
