Thai Gelatin Dessert with German Fruit
A refreshing and light dessert inspired by Thai cuisine, using German gelatin and rich fruit.
Ingredients
- β4 sheets German gelatin
- β1 cup Water
- β1 cup Sugar
- β2 tsp Gelatin flavor (Thai red tea)
- β1 cup Fresh pineapple
- β1 cup Fresh mango
- β1 cup Coconut milk
- β2 tbsp Rich butter
- β1/4 cup Grilled coconut flakes
- β2 tbsp Lime juice

Soak the German gelatin sheets in water for 5 minutes.

Combine the sugar, gelatin flavor, and coconut milk in a saucepan.

Heat the mixture over low heat, stirring until the sugar dissolves.

In a separate bowl, whip the coconut milk until it thickens.

Add the whipped coconut milk to the saucepan and stir until combined.

Strain the mixture through a fine-mesh sieve into a bowl.

Add the pineapple, mango, and lime juice to the bowl and stir to combine.

Pour the mixture into individual serving cups or a large serving dish.
