Irish Brown Sugar Cookies
A classic Irish cookie recipe with brown sugar and a chewy texture. Perfect for a snack or dessert.
Ingredients

- β1 package (12 cookies) chewy sugar cookiescrushed into crumbs
- β2 1/4 cups all-purpose flour
- β1 tsp baking soda
- β1 tsp salt
- β1 cup unsalted buttersoftened
- β2 large eggs
- β1 tsp pure vanilla extract

Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

In a large bowl, cream together butter and sugars until light and fluffy.

Beat in eggs one at a time, followed by vanilla extract.

Gradually mix in the dry ingredients until just combined, being careful not to overmix.

Stir in the crushed cookies.

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.
