Rich Creamy Canadian Almond Crème Brûlée
A luxurious and creamy dessert featuring the flavors of Canada, topped with a caramelized almond crust.

- ●1 cup granulated sugar
- ●3 large egg yolks
- ●1 tsp unsweetened almond extract
- ●1 cup almond milk
- ●1 cup sliced almondsfor topping

Preheat oven to 300°F (150°C).

In a medium saucepan, combine the cream, sugar, and almond extract. Heat over medium heat, stirring occasionally, until the sugar dissolves.

In a small bowl, whisk together the egg yolks. Temper the egg yolks by slowly pouring the warm cream mixture into the egg yolks, whisking constantly.

Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10-12 minutes.

Strain the mixture into 4-6 ramekins or small baking dishes. Place the ramekins in a large baking dish and add hot water to come halfway up the sides.

Bake for 25-30 minutes or until set. Remove from the water bath and let cool to room temperature.

Cover and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin. Caramelize the sugar with a kitchen torch or under the broiler.

Top each ramekin with sliced almonds and serve chilled.
