Pan-Seared Yu with Sweet Potatoes and Zhu Sauce
A Chinese-inspired dish featuring pan-seared yu, roasted sweet potatoes, and a savory zhu sauce.
Ingredients
- β2 yuabout 1 pound
- β2 sweet potatoesabout 1 pound
- β2 tablespoons zhushaoxing wine or dry sherry
- β1 tablespoon richdark soy sauce
- β2 cloves earthyminced garlic
- β1 teaspoon chineseground ginger
- β2 tablespoons oilvegetable or peanut oil

1. Preheat the oven to 400Β°F (200Β°C).

2. Cut the yu into 1-inch pieces and season with salt.

3. Heat 1 tablespoon of oil in a large skillet over medium-high heat.

4. Add the yu to the skillet and cook for 2-3 minutes on each side, or until browned.

5. Transfer the yu to a baking sheet and roast in the oven for 10-12 minutes, or until cooked through.

6. While the yu is cooking, heat the remaining 1 tablespoon of oil in the skillet over medium heat.

7. Add the earthy (garlic) and chinese (ginger) to the skillet and cook for 1-2 minutes, or until fragrant.

8. Add the zhu (shaoxing wine or dry sherry) and rich (dark soy sauce) to the skillet and cook for 1-2 minutes, or until the liquid has almost completely evaporated.

9. Add the sweet potatoes to the skillet and cook for 2-3 minutes, or until they begin to brown.

10. Serve the pan-seared yu with the sweet potatoes and zhu sauce.
