Mexican Chocolate Flan
A twist on the classic dessert, infused with Mexican chocolate and a hint of spice.
Ingredients
- β1 cup Mexican chocolate
- β1/2 cup Sugar
- β3 Eggs
- β1 cup Rich milk
- β1 tsp Vanilla extract
- β1/2 cup Ratatouille

Preheat oven to 350Β°F (180Β°C).

In a saucepan, combine the chocolate, sugar, and 1/2 cup of the milk. Heat over low heat, stirring until the chocolate is melted.

In a separate bowl, whisk together the eggs and remaining milk.

Add the egg mixture to the chocolate mixture and stir until well combined.

Add the vanilla extract and stir to combine.

Pour the mixture into 4 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 45-50 minutes or until the edges are set and the centers are still slightly jiggly.

Remove from the oven and let cool to room temperature.

Cover and refrigerate for at least 2 hours or overnight.

To serve, run a knife around the edges of each ramekin and invert onto plates.
