Satay Peanut Sauce Noodles
A Southeast Asian-inspired noodle dish with a rich, savory peanut sauce and the flavors of satay.
Ingredients
- β8 oz rice noodles
- β1/2 cup peanuts
- β1/2 cup coconut milk
- β2 tbsp soy sauce
- β1 tbsp honey
- β2 cloves garlic
- β1 tsp grated ginger
- β2 tbsp vegetable oil
- βchopped cilantro
- β2 lime wedges

Cook the rice noodles according to package instructions. Drain and set aside.

In a blender or food processor, combine peanuts, coconut milk, soy sauce, honey, garlic, and ginger. Blend until smooth.

Heat 1 tablespoon of vegetable oil in a saucepan over medium heat.

Add the peanut sauce mixture to the saucepan and cook, stirring constantly, for 2-3 minutes.

Add the cooked noodles to the saucepan and toss to combine with the peanut sauce.

Cook for an additional 1-2 minutes or until the noodles are well coated.

Stir in chopped cilantro and cook for 1 minute.
