Irish Wensleydale Casserole
A hearty, comforting casserole that combines the richness of Irish sausages with the tanginess of Wensleydale cheese.
Ingredients
- β4 Irish sausagesany type of Irish sausage will do
- β1 Onionchopped
- β2 cloves Garlicminced
- β2 Carrotspeeled and sliced
- β2 Potatoespeeled and sliced
- β1 cup Wensleydale cheesecrumbly
- β1/2 cup Milkwhole milk
- β2 tablespoons All-purpose flourfor thickening
- β2 tablespoons Butterunsalted

Preheat the oven to 375Β°F (190Β°C).

Cook the Irish sausages in a large skillet over medium-high heat, until browned on all sides and cooked through.

Remove the sausages from the skillet and set aside.

Add the chopped onion and minced garlic to the skillet and cook until softened.

Add the sliced carrots and potatoes to the skillet and cook for 5 minutes.

In a separate saucepan, melt the butter over medium heat.

Add the milk and bring to a simmer.

Add the crumbled Wensleydale cheese and stir until melted.

Add the flour to the saucepan and stir to thicken.

Pour the cheese sauce over the vegetables in the skillet and stir to combine.

Return the cooked sausages to the skillet and stir to combine.

Transfer the casserole to a baking dish and top with additional Wensleydale cheese if desired.
