Jamaican Beef Stew
A hearty and flavorful stew originating from Jamaica, featuring slow-cooked beef in a rich and aromatic sauce.
Ingredients
- β1.5 lbs beef stew meatcut into 1.5-inch cubes
- β2 cups rich beef brothhomemade or store-bought
- β2 tsp jamaican curry powder
- β1 tsp brown sugar
- β1 tsp soy sauce
- β2 sprigs thyme
- β2 tbsp all-purpose flourfor dusting the beef
- β2 tbsp vegetable oilfor browning the beef

1. Heat oil in a large Dutch oven over medium-high heat. Brown the beef cubes in batches until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.

2. Reduce heat to medium and add a bit more oil if necessary. Add the onion and cook until softened, about 5 minutes.

3. Add the curry powder and cook for 1 minute, stirring constantly.

4. Add the brown sugar, soy sauce, and thyme. Cook for 1 minute, stirring constantly.

5. Add the flour and cook for 1 minute, stirring constantly.

6. Gradually add the beef broth, whisking continuously to avoid lumps.

7. Return the browned beef to the pot and bring to a boil.

8. Reduce heat to low and simmer, covered, for 2-1/2 hours or until the beef is tender.
