Rich Fettuccine Pasta
A creamy fettuccine pasta dish inspired by Malaysian flavors.
Ingredients
- β250g fettuccine pasta
- β200ml rich coconut cream
- β30g grated coconut
- β20g toasted peanuts
- β2 tbsp soy sauce
- β1 tbsp fish sauce
- β2 tbsp lime juice
- β20g chopped fresh cilantro
- β3 cloves garlic
- β1 tsp sugar
Instructions

Cook the fettuccine pasta according to package instructions.

In a separate pan, toast the peanuts over medium heat for 2 minutes.

In a blender or food processor, combine the coconut cream, toasted peanuts, soy sauce, fish sauce, lime juice, garlic, and sugar. Blend until smooth.

In a large saucepan, combine the blended coconut mixture and grated coconut. Whisk over medium heat until the sauce thickens.

Add the cooked fettuccine pasta to the saucepan and toss until well coated.

Season with salt to taste.

Garnish with chopped cilantro before serving.
