Pistachio Stir Fry
A quick and flavorful Chinese stir fry dish made with pistachio-crusted chicken, mixed vegetables, and a sweet soy sauce.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons pistachio mealfor crust
- β2 tablespoons soy saucesweet soy sauce
- β1 tablespoon vegetable oilfor stir frying
- β1 bell peppersliced
- β1 bunch broccolicut into florets
- β2 carrotspeeled and sliced
- β2 cloves garlicminced
- β1-inch piece gingergrated
- β1/4 cup green onionschopped

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the chicken to the wok and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the wok and set aside.

Add another tablespoon of vegetable oil to the wok and stir-fry the bell pepper, broccoli, and carrots until tender-crisp, about 3-4 minutes.

Add the garlic and ginger to the wok and stir-fry for 1 minute.

Add the cooked chicken back into the wok and stir in the soy sauce.

Cook for an additional 1-2 minutes, until the chicken is coated in the sauce.
