Mexican Taco Casserole
A twist on traditional tacos, this casserole is perfect for a weeknight dinner. It's easy to make and feeds a crowd.
Ingredients

- β1 package (8-10 count) tacos
- β1/2 cup richsour cream
- β1 tsp mexicancumin
- β1 can (14.5 oz) tomatoesdiced
- β1 cup shredded cheesecheddar or Monterey Jack
- β6-8 tortillascorn

Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks.

Once browned, drain the excess fat and add the cumin, stirring to combine.

Stir in the diced tomatoes and cook for an additional 2-3 minutes.

In a separate pot, warm the tacos according to package instructions.

In a large baking dish, arrange a layer of tortillas.

Spoon the beef mixture over the tortillas, followed by a layer of shredded cheese.
