Peruvian Chicken Stew

- β1 1/2 pounds chicken breastcut into bite-sized pieces
- β2 red bell pepperdiced
- β1 large oniondiced
- β3 cloves garlicminced
- β2 Peruvian aji amarillo peppersdiced
- β4 cups stew rich beef brothhomemade or store-bought
- β2 tablespoons tomato pastedissolved in 2 tablespoons water
- β1 teaspoon cuminground
- β1/2 teaspoon paprikasmoked
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste

Heat oil in a large pot over medium-high heat.

Add chicken and cook until browned, about 5 minutes. Remove from pot and set aside.

Add onion, bell pepper, and garlic to the pot and cook until tender, about 5 minutes.

Add aji amarillo peppers and cook for 1 minute.

Stir in tomato paste, cumin, paprika, salt, and pepper. Cook for 1 minute.
