Polish Beef Stew
A hearty and comforting stew originating from Poland, perfect for a cold winter night.
Ingredients
- β1 lb Beef stew meat
- β1 medium OnionChopped
- β2 medium CarrotSliced
- β2 large PotatoDiced
- β2 cups Beef broth
- β1 cup Red wine
- β2 tbsp Tomato paste
- β1 tsp Dried thyme
- β1 tsp Salt
- β1 tsp Black pepper

Heat oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes. Remove from pot and set aside.

Add the onion and cook until softened, about 5 minutes.

Add the carrot and potato and cook for an additional 5 minutes.

Add the beef broth, red wine, tomato paste, thyme, salt, and pepper. Stir to combine.

Return the beef to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 1/2 hours or until the beef is tender.

Serve hot, garnished with fresh parsley if desired.
