Vegan Polish Oat Gratin
A hearty vegan gratin made with oats, perfect for a chilly evening. This dish is a twist on classic Polish cuisine.
Ingredients
- ●1 cup Rich Mushroom Duxelles
- ●1 cup Polish Sausage-style Seitan
- ●2 cups Rolled Oats
- ●2 cups Vegetable Broth
- ●2 tablespoons Nutritional Yeast
- ●1 cup Gratin Cheese Alternative
- ●2 sprigs Fresh Thyme
- ●to taste Salt
- ●to taste Black Pepper

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the mushroom duxelles until fragrant.

Add the seitan to the skillet and cook until browned.

In a separate pot, bring the vegetable broth to a simmer.

Add the oats to the pot and cook, stirring occasionally, until the oats have absorbed most of the liquid.

In a greased 9x13-inch baking dish, create a layer of the oat mixture.
