Middle Eastern Maqluba with Cannellini Beans
A unique twist on the traditional Middle Eastern dish, Maqluba is turned upside down for a hearty and flavorful one-pot meal. This version features the addition of cannellini beans for extra protein and creaminess.
Ingredients
- β1 can (15 oz) cannellini beans
- β2 cups rich, roasted chicken broth
- β1 cup middle eastern rice blend
- β2 tbsp olive oil
- β1 medium onion
- β2 cloves garlic
- β1 tsp ground cumin
- β1 tsp ground coriander
- βto taste salt
- βto taste black pepper
Instructions

Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the rice blend and cook for 1-2 minutes, stirring constantly, until lightly toasted.

Add the chicken broth, cumin, coriander, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the liquid has been absorbed and the rice is tender.
