Welsh Chinese Rarebit
A Chinese twist on the classic Welsh rarebit, featuring rich, roasted, and scottish ingredients.
Ingredients
- β2 tablespoons Rich Malt Vinegar
- β1/4 cup, diced Roasted Scotch Bonnet Peppers
- β2 ounces, diced Scottish Smoked Salmon
- β1/2 cup, grated Welsh Rarebit Cheese
- β1 tablespoon, chopped Scallions
- β1 teaspoon Sesame Oil
- β1 teaspoon Soy Sauce
- β1 teaspoon Sesame Seeds
- β1 teaspoon Sesame Seeds for Garnish

Heat the malt vinegar to 180Β°F (82Β°C).

In a separate pan, toast the sesame seeds until fragrant.

Add the diced scotch bonnet peppers to the toasted sesame seeds and stir for 1 minute.

Add the diced smoked salmon and stir for an additional 2 minutes.

Stir in the grated Welsh rarebit cheese until melted.

Add the sesame oil and soy sauce, and stir for 30 seconds.

Transfer the mixture to a serving dish and garnish with chopped scallions and toasted sesame seeds.

Drizzle the heated malt vinegar over the top of the rarebit.

Serve immediately and garnish with additional sesame seeds if desired.
